Gluten Free Gingerbread Men

Ingredients
  • 1 1/2 cup GF flour blend
  • 1/2 tsp baking soda
  • 1  1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 6 Tbsp butter
  • 4 Tbsp unsulphured molasses
  • 1 Tbsp honey
  • 1 egg
  • 1/2 tsp vanilla extract
Directions:
  1. Preheat oven to 350* F
  2. Whisk together dry ingredients.
  3. Beat melted butter (or softened for less time in fridge), molasses, honey, egg, and vanilla in mixer on low. Slowly add in dry ingredients. Mix 3 minutes. 
  4. Knead dough on floured surface. Roll out 1/4 thickness (refrigerate for better workability). 
  5. Cut out desired shapes with cookie cutters.
  6. Put cutouts on cookie sheet in freezer 20 minutes before baking in order for them to hold shape.
  7. Bake 8 minutes (or to desired doneness).

All the sugar cookies!

We baked 120 something gluten free sugar cookies for a cookie decorating party. It was one batch in the 7qt KitchenAid and they turned out stupendous. The below recipe can be done with gluten free or conventional all purpose flour. We quadrupled it to get 120 cookies and it worked fine. 

Sugar Cookie
Ingredients:
  • 1 cup sugar
  • 1 cup butter (we like Kerrygold)
  • 3 Tbsp milk
  • 1 tsp vanilla extract
  • 1 egg
  • 3 cups flour (GF All Purpose or standard AP)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
Directions:
  1. Preheat oven to 400* F
  2. In mixer, on low; Cream butter, sugar, eggs, milk, vanilla, and egg. Slowly add flour and finally baking powder and salt. Mix well. 
  3. Refrigerate for 30 minutes before rolling out.
  4. Roll out to 1/4 inch thickness and cut into desired shapes.
  5. Bake 5-9 minutes (to desired doneness).

Buttercream Frosting for Decorating
Ingredients:
  • 1/2 cup butter
  • 1 pound powdered sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup milk (or water)
  • 1 to 2 drops food coloring (as desired)
Directions:
  1. Beat together in mixer. 
  2. Separate before adding colors. 
  3. Spread with knife and add sprinkles/candies OR place into bags and pipe onto cookies.
